Flammkuchen with bacon, onion, and oyster mushrooms

Which ingredients do you need?
- 125 g bacon strips
- 1 roll flammkuchen dough
- 1 small red onion
- 3 sprigs of fresh thyme
- 75 g gruyere cheese
- 100 g oyster mushrooms
How do you make this dish?
Preheat the oven to 200 °C.
Heat a frying pan without oil or butter and fry the bacon for 5 minutes on medium heat. Remove the bacon from the pan and drain, leaving the bacon fat in the pan.
Meanwhile, tear the oyster mushrooms into pieces. Strip the leaves from the thyme sprigs. Bake the oyster mushroom for 5 minutes in the remaining bacon fat. Add the thyme at the last minute.
Meanwhile, cut the red onion into half rings. Grate the gruyere cheese.
Roll out the flammkuchen dough on a baking tray covered with baking paper. Spread with the crème fraîche and divide the grated cheese, bacon, and oyster mushrooms over it. Bake the flammkuchen in the middle of the oven for 15 minutes until done and crispy.
